Strategic Advisory of Existing Locations
Blount Fine Foods has been in the food service business since 1880. They operate a retail division of year-round and seasonal New England Clam Shacks in addition to their core business as the largest producer of clam chowder in New England. Ownership engaged RealFood to improve unit and overall retail division financial and operational performance.
Beginning with an Operational Opportunity Assessment—a multi-day, onsite evaluation of all service, operations, back office systems and financials measures—the team crafted a detailed strategy to reposition the current restaurant model. This included implementating revised menus, advanced cost controls, improved internal reporting, and extensive team training. Beyond crafting the strategies, RealFood worked with the management teams to ensure proper execution of these newly defined best practices.

RealFood continued to work with the management and staff to ensure lasting results and to fine-tune as needed. The highest priority of the project was to build upon Blount’s commitment to extraordinary customer service and superior products. While these metrics were improved, the newly implemented systems also significantly reduced prime cost and increased net operating income across all units. Based on the success of these efforts, Blount continued to engage with RealFood in a management advisory capacity to assist in strategic planning, monitoring of operations, redevelopment of human resources controls, marketing and executive development.
Specifically attributed to RealFood’s menu development work, Blount recorded $100,000 in cost savings, year-over-year.
