VISION

RealFood supported the team at Trillium Brewing Company in realizing their vision of a modern taproom, farmhouse restaurant, and rooftop bar, in one shared experience in a historic warehouse in the Fort Point Channel neighborhood of Boston. The focus was to develop an immersive dining and drinking experience in alignment with the craft beer brewery’s world-renowned reputation.

Trillium looked to RealFood to develop a schematic menu, operations model, and foodservice design for the multiple, coexisting guest experiences: a fast-paced bar, on-premises dining, food and beer-to-go, and group events.

OUTCOMES

Every detail of the business was thoughtfully considered to deliver a consistent, branded experience and continued success. The high-functioning, energy-efficient kitchen and high-capacity glass-washing stations balanced modern efficiency and intentional design, while the farmhouse-inspired ambiance was illuminated with a wood-fired cooking element. To preserve and showcase the former warehouse’s historic character, the walk-in cold storage unit integrated the original glass windows. Finally, the selection of modular kitchen equipment allowed for easy replacement when necessary.
